Thai Pasta


 
So - my picture doesn't really do this justice - but this is SO good!!  I make it all the time.  You can eat it right away hot, but it's even better cold, which is really great for summer.  It's also super easy!!
 
Ingredients:
1 Box spaghetti or angel hair pasta
3/4 C sesame oil
1-2 T red pepper flakes (optional)
6 T honey
6 T soy sauce
1/2 C chopped green onions
1/2 C shredded carrots
1/2 C chopped cilantro
3/4 C chopped, unsalted peanuts
 
In a small pan heat the sesame oil with the red pepper flakes for about 2 minutes.  You can do this longer if you like it spice or leave out the red pepper all together if your family doesn't like the spice (like mine)
 
Strain out the red pepper flakes and add the oil to the honey and soy sauce.  Whisk that all together.
 
Cook the pasta according to the directions and drain - add it to the sesame oil mixture, stir then add in the vegetables and peanuts.  It's also good with grilled chicken - but my carnivore husband actually likes it better without the chicken, so there you go!
